What kind of prices / options can I get on a wedding ring. I'd like something involving sapphire if that exists.

Closest thing to sapphire is:

Short:

This band of purest platinum has been polished to a mirror sheen and

That would cost 100 gold and 25 diamonds. For me, the price would depend on how hard the gold is to get. I have WAY more than enough diamonds.

Even if something doesn't exist in any cartel, you could still get what you want. Discussing it with a Trademaster could get you a chance to get the item you want designed, if you have the time to wait for it.
