With certain pieces of jewelry, you can use a precious stone of your choice for the main gem. You must have the gem in your inventory. The gem can be any of the 15 gems that exist in Lusternia. (Ruby, diamond, jade, opal, emerald, sapphire, moonstone, turquoise, beryl, pearl, amethyst, garnet, onyx, bloodstone and coral)

It would be about midway through the skillset. Not too high, Adept maybe. This is basically to give Jewellers more flexibility in their designs. For example:

(Market): Cyaece says, "Get a beautiful ring set with whatever gem you choose. Go for variety with Cyaece's jewels."

I don't get it...

It's basically so that you don't have to have an emerald in a nice ring design that you think would be better with a ruby, for example. Whever sets the design would be able to choose wether to make the gem changeable, and select which gem to use. Not that difficult

That wouldn't work well. The designs themselves are called things such as "a jade ring of friendship" and it wouldn't make sense to craft it using sapphires. If you want variety you'll have to submit new designs or pull an Ialie and get a million cartels and submit all twelve varieties at once.

The designer of the design would choose if the gem should be interchangeable or not. They could even choose a selection of gems that you were allowed to put in there. For example, if I were to design a ring with a gem carved into an eye set into it, I could set so that the Jeweler could decide wether to make it Sapphire, Ruby or Emerald.
