Alchemists do not make mercury - they need it to make quicksilver potions.
If you put a lump of coal into a forge (and I believe an oven, but I could be wrong) and fire it, there is a small chance that instead of lightning the forge, you'll get mercury (because it was a cinnabar, not coal). So, ask a smith (or cook).

Yup, your best bet is cooks, if you're an alchemist, and you just trade them sugar for mercury, I've traded at 3 for 1 myself with some of the alchemists I know. Mercury is rarer then sugar, for various reasons.

I trade usually 1:1 because sugar's needed more, but also costs the alchemist more.
