Most serenguard take moon for moonburst and drawdown. Stag has some nice skills as well though, like the warpaints, and bonding to a totem. I'd probably take stag myself, but the popular choice is moon.

At current, Moon is more useful for a Serenguard since Stag works better with the Hartstone. Though, I find Stag very fun and has a cool RP wrapped up in it. Ancestors ftw!

It really depends on race, character build/weapons, and what type of combat you are aiming for.
Moon is by far the preferred, and is quite useful for both bashing and group combat. Also, the coven abilities are quite nice to have in groups.
Stag is incredibly underrated, as it has alot of potential for speed/wounding knights, as well as better defensive buffs (with the exception of drawdown, aura, and a few notable power hungry abilities).
I'm an Igasho Moon BM (lvl 3 blunt, cutting and magic resistance, as well as plenty of damage/accuracy increases). If you want, ask on GT, or spar a bit and try to find what type of fighting you are best suited for.
