So I've done a little scouring of the forums, and I can't seem to find any info on how high a human evolves to once they reach demi, depending on the archetype of course. Not even the wiki lore has them posted. I was wondering if there is a list anywhere, or if it would be ok to make one here.

Didn't human stats got nerfed? How up to date are those lists on human stats?

The Talnara site is usually kept very well updated. I would tell you that those stats are correct.

Those are the most recent stats. Pretty sure pre-nerf the final stats were +1 con and +1 from what they are now.

Yep, pretty sure they used to start getting stats from level 50 but now start at level 60.

Nah, it still starts at level fifty, but instead of one stat every 5 levels, it's one stat every 7/8 levels (alternating, iirc, or something to that effect).

As far as I can tell, the Talnara site is much more up to date than the lore wiki.
