I can't seem to find any information on them besides how to activate. Is there a post somewhere for it saying what they each do/say and I am just missing it somehow?

I believe they said during one of the last doll cycles that the newer ones would only interact with their opposites, but I could be wrong. So far I've seen no interactions at all with any of my dolls past the avatars, which is really sad. I understand that it gets exponentially harder to make new interactions with EVERYTHING each time, but more intra-org interactions would be nice, even just one or two here and there.

Even doing the original 'five' (ie Supernals) it became exceedingly difficult to make reactions for every other doll past the second iteration. Realize that it would've meant 20 new interactions for every existing doll when a new one is made on the same 'side' (10 for the new doll, 10 for the old one to react to it). Like you said, exponentially harder, and that's an understatement.
Right now they only interact with their opposite. They may interact with previous ones if it's thematically appropriate (ie the Generators) but I'm sitting here trying to think of any Marilynth/Altaira reactions and really I can't think of anything that'd be substantial and worth the effort. Nonetheless, I'll bring it up and see how everyone feels about it. That kind of a thing becomes a big commitment, especially for people down the road.

I totally understand, and I'm not asking for any commitments to anything (Each new doll will interact with X), just some more scattered about if you have time. As it is, if you're only collecting one set, you'll never see any new ones, and the interactions are a really fun incentive to collect them all.
