Well, I'm just going to talk about forging since that is my trade. And basically, I see it as being less profitable here than it has been in the other games, mainly because of the high cost of forging anything worthwhile.
The comms requirements for each sellable item are all significantly high, especially when you factor in the cost of steel. Like a full set of the default chain mail requires 75 steel, 10 cloth, and 8 leather which adds up to 11550 in pure comm cost if you buy at Magnagora's relatively low prices. That basically means to forge you have to invest a large amount of gold, and thats only if you can find the necessary materials in sufficient quantities. Even the custom designs, mostly have high comm requirements.
Its not even the cost that is the main problem though, since you can charge your customers for that, its the comm availability. Concentrating on steel, which forms the largest basis of most forged items, Magnagora takes in about 200 steel on a good day, while ruling despotically. There are also about 255 steel in Angkrag priced so high that no one will buy it, and much smaller quantities in the other mines. So each day, two full suits of chain mail can be made at the most, and that is only if one person buys all that steel. Also alot of the items, that dont require as much steel, are not in demand. For example, leather armour and scale armour are not desired much, because of great robes. And most of the normal weapons dont sell well, because of master weapons.
Lastly, there is the problem that has plagued forging since its inception. The duration of forged goods, drastically lowering the demand for them over time.

If I was a forger, I'd trans it, make myself an awesome fullplate, then forget forging and learn another tradeskill.

It's just an observation that I've noticed on market people saying stuff like, "Where's the mythical mage enchanter now?" or...stuff that sounds less lame to the effect that they want a mage enchanter.
And the same person asks again and again.
So they're obviously not finding anyone.

I voted for Alchemy and second best I think should be Forging, maybe because I am so used to being a "knight" in realms already... always looking for equipment and paying a good price for it. Even when forging may be more expensive to produce, due to the coms, for some reason the prices for wares I've seen so far give me the impression that there is a decent margin for profit.
Considering Alchemy, I voted as the best trade because it is quite exclusive... so only a group of people can offer it, and with only being able to refill health an alchemist will most likely be in business. Even though, that the dependency of Alchemist on Herbalist for herbs may limit the control of the Alchemist on it's trade, I still think that if Alchemists got organized along with Herbalist they could produce enough elixirs to satisfy any demand... And probably fight more efficiently against overharvesting, the one thing I believe makes Harvesting become a null trade for many harvesters out there.

I've been asking for an enchanter for two real-world days now. Not a nibble. I'm starting to wonder if they've been overhunted, and soon I'm going to have to be bringing their eggs to Magnagora to be hatched....

I voted for Jewelry, because the gems don't decay and you can now get several decent gems from the cutting process. You can also use those gems to make and sell fairly cheap vials, bottles, and glasses.
Cooking would be at the bottom of the list, in my case, since I can forage for food or just eat 100 spices. When I have some 5-6k spices on me, it's not hard to stay satiated.
For the folks who say that herbs has no cost associated with it, please remember all the time we spend travelling, harvesting, and replanting. I just wish I could replant the herbs from my rift somehow. Maybe a special tailored bag that would preserve the herbs as seeds and allow them to be replanted at any time in the future. The two minute time limit is a bit ridiculous at times, especially when you have to actually find a room with several plants in it first.

I make about 7k a lusternian year from cooking. The advantage of "free" comms, a shop close to the Megalith and relativly cheap prices.
