Charge, tackle, barge? I really doubt these skills are better than using the weapons. If you aren't a tae'dae they aren't even guaranteed to do anything at all.
As for the secret knight techniques, if I were to apply my monk limb damage counter to a status bar and the like then I could be deadly. But the problems there are...
1. The amount of wound damage I do is different to almost everyone, and the message from applying mending etc. looks like the one for applying health, so it's easy to fake the healing.
2. A monk would land 3 hits for a level 1 break and 6 for a level 2 break. As a trill knight, I have to land 25 hits to get another ur'guard to 0 limb status, and deal with a greater ability to parry and dodge from my enemies. Overall, keeping track of my opponent's wound state is pretty damn hard so no wonder no one has become known for doing it well.

If you arn't in the room you can't be webbed or afflicted. If they are stunned same deal. *shrug*

But if during that time you aren't increasing the limb damage and afflictions on them, you're making no progress and giving them time to heal. It doesn't further your offense at all but they deffinitely get unstunned before you regain balance, so it's simply giving them a bit of time to recover.
