Does anyone have any idea of all the different balances? I'd make an educated guess but realised certain herbs and alchemy elixirs etc. may have seperate balances.

There is Equilibrium, Balance, Herb/Smoking Balance, Sparkleberry balance, Health/Mana/Bromide balance, Salve(i.e. mending/regeneration) balnace, and Elixir Balance.
And you might want to look into Sleep, Stun, and Writhed as balances as well.

You want "purgative."
