Duck, but I personally don't care between white and dark meat.

Duck has a taste closer to pheasant than turkey (and not that close to chicken, at least as far as two different kinds of poultry go). I'm a fan of dark meat, so I might be biased, but I think duck tastes pretty good. I'm not sure I'd describe it as "better all around," but it's worth trying.

A friend of mine makes a concoction where he takes a de-boned chicken and sticks it inside a de-boned duck and then puts that inside a de-boned turkey and that's what they eat for Thanksgiving instead of just a turkey.

That's been the trend for several years now.

I love steak. It's only in poultry that I'm not fond of dark meat.

I think we have different definitions of dark meat, then.

Dark meat = beef. Also the thighs and legs of poultry (and apparently all of duck)
white meat = pork (except maybe ham, not sure about it). Also the breasts and wings of poultry.

Steak IS dark meat. Red meat is dark, definitions match. Eat more red meat. Cram it in. Stuff yourself. Put yourself in an oven, ram a thermometre in and cook yourself at twenty minutes a kilo at 280C.

I don't think I've ever heard mammal meat referred to as anything other than red meat. I didn't think people actually made a light/dark distinction with it (except for pork advertisers who try to pretend that it's as healthy as poultry).
