Anyway, go read the Chronicles Trilogy by Weiss and Hickman, check out R.A. Salvatore's lineup of Forgotten realms books, stuff by Terry Brooks (Shannara, Magic Kingdom for Sale, etc).

From Weis and Hickman, the War of Souls trilogy is also good, though it doesn't top the Chronicles, I think.
I can't believe I forgot Tamora Pierce. The Circle of Magic and The Circle Opens are all I've read, but they're excellent. Yes, they're aimed at teens, but that only means a less convoluted plot (A Song of Ice and Fire makes my head hurt sometimes) and less vocabulary, not neccessarily "dumbed down" or anything.
Xanth I can't read. The first few were good, but it goes downhill very fast. I've had enough puns to do me the rest of my life.
A very good that hasn't been mentioned yet is Gene Wolfe's Book of the Long Sun. Very neat setting and plot.
