Having tried both, at least to some degree , I'd recommend herbs if you just want money, or Alchemy if you've the time and dedication to put in it. Alchemy, while needing much forplanning (what herbs to buy, how many, at which prices, getting in touch with loyal kegrefillers, etc) can give you an eventual larger profit. It has more income, but also more expanes. That's my opinion.
Also, as a sidenot, while they seem to have subsided somewhat, Alchemy, especially was subject to RUTHLESS undercutting, where prices dropped exteremly low.

Note that herbs takes a LOT more work than alchemy. Time and dedication are FAR more necessary for herbs.

Alchemy is far easier than herbs, in that you can hit up an herbalist and make some refills in a few minutes. I harvest for hours.
And Alchemy is not more profitable than herbs, unless you count time into the equation. Herbs is pure profit, Alchemy costs a fortune to keep herbs on hand to refill.

Speaking as a shop-less tailor I can say that profit from it is very occasional and almost exclusively from great robes. The best thing you can do with Tailoring is have a good cash flow so you can buy commodities low en masse and sell later at inflated prices (Or sooner, undercutting everyone - depends on how soon you need the gold, really). Unfortunately, demand is low, particularly because a lot of people don't wear anything besides robes/armour, and if you don't have your own store, be prepared never to sell common items like shoes, belts, packs and such. What most people need a real, live tailor for is proofing and mending. Mending is effectivelly a case of charge whatever you want, but I beseech you on behalf of all tailors to charge as much as possible for mending great robes (IE, charge enough so that your profit from it is as good as from making a new robe, or narrowly more). Nearly everything isn't worth mending (Cost of mending a satchel: 800 gold. Cost of making a new one: at most 600 gold.). As for proofings, I generally find that asking for a tip is more effective than telling them to hand over 200 gold per vial.
