Mages don't have that many skills to choose from, since Elementalism/Aquamancy and Illusion are for everyone to take. As for the third skill:

Runes - weak. Only advantage - you can rune statues.
Dreamweaving - good for spying/scouting and being annoying. Can't really kill anyone, unless they are a total novice.
Psionics - considered overpowered by some, very good by rest. Telepathy messes up with semi-masked mental afflictions and has an ego-based instakill, telekinesis locks throats/legs (have to focus body), chokes (blackout) and bursts veins - you can instakill the enemy with enough burst veins.

Runes sucks. Don't take it if you want to be able to fight (although it does have some uses in group combat, such as the rad rune).

Dreamweaving is good for geomancers because you can use the blackout to mask the chasm instakill; not quite as good for aquamancers but you can still make it work. It's also useful for spying and stuff, as well as killing people remotely.

Psionics is the offensive powerhouse; telekinesis can give concussions, throatlock, brief blackouts, and an instakill having to do with burst vesssels. Telepathy can do lots of damage and give various afflictions, and has a half-ego instakill. Psionics is also very nice for bashing because it gives you some extra defenses; telekinesis in particular gives you the Forcefield ability which converts health damage to ego damage.
