If you want an incredible experience, choosing any guild in Lusternia will be a bonus. It depends on your tastes, however.
Moondancers and Shadowdancers are an extremely spiritual guild. They focus on the natural Great Spirits of Mother Moon and Mother Night, while the druids (Whitehart and Crow guilds) focus on Whitehart and Crow.
Should you want more of an epic guild, Celestines in New Celest and the Nihilists in Magnagora are your best bets. Celestines follow the Supernal Lords and Ladies. The story behind them is rather controversial. They were supposedly soon-to-be gods/goddesses, I think if my history is correct, that never made it to their transcending zenith. The Nihilists, on the other hand, revere and obey the Nil Lords and Laides. Or Dark Lord and Ladies. These are "tainted" or rather maniacal entities who stress domination, conquering of one's enemies, et cetera and so forth.
However, I would greatly stress you read the Histories here. Click here for the histories of Lusternia. By reading the histories, you'll gain a better understanding of what's happened and what each commune and city have developed and why they've developed so.

I just want to take this chance to echo what everyone else has said about thieves. Org leaders take it rather seriously when you make their organization look bad. If you're perceived as a newbie thief, you'll lose support of your city, find yourself without the skills needed to steal and PK, and get ganked every time you step outside of a safe room. Rogues with enemies simply don't survive here. Unlike Achaea, they get crippled.

I think thats also the reason why stealing is pretty much looked down upon. One offensive action of a citymate/communemate/clanmate/family/orderwide could easily escalate into a citywide/communewide/clanwide/familywide/orderwide feud.

And this, my friends, is why I love Lusternia soooo much more than any of the others.
I want to see Lusternia grow into a game with many players. However, I am somewhat nervous at the thought of those who play Achaea coming here. Course, I'm sure they'll understand this one is in no way like Achaea and will act properly!

Pretty much anything that allows you to steal from shops is a bug. All incidences of shop theft in the past have been bugs where estarra herself has made sure that all involved parties recieved their due. Lusternia does not promote theft. Quite the opposite.

Not entirely true. A rogue Moondancer moonbeamed to me in the stockroom of the Moonlace shop back before I even had echoes for moonbeam, much less an auto-leave-stockroom trigger. Got away with the Cartels funds which I had kept in the stockroom, reflexively bought credits with them making the money irrecoverable, and then proceeded to pick up all the items I had for sale there (and my "acquired" Crow Cloak which he let decay, ugh). After a few days, when he logged back on, we managed to kill him, resurgem his body in a manse behind a locked door, steal everything he took from me back (except the Cartel's savings), and then we left him completely locked down behind a locked door he couldn't open, with no way to even kill himself.
And.... that was the last we saw of him.
