What exactly determines how much nurishment you get from a given peice of food? Is it just recipe type? Are all baking recipes are the same, all soups the same and all dishes are the same or does it vary from recipe to recipe? If so, how is it calculated for each recipe? Based on what ingredentes are used maybe? Would eating 5 peices of meat commodities be like eating a dish made from 5 meat comms? How does cook skill and fortifying food factor into this?

It probably just depends on the type.
Those are the types. Though the commodities might vary a bit for two recipes of a type, one would just be as filling as the other.

a cuisine item, fortified once, becomes fit for the gods (instant satiation) It used to be that two items from the dishes category (IE fishcakes) that were unfortified would cause utter satiation, but this was nerfed without notice or explanation. I don't know about breads, pastries or cakes, except that they aren't all that filling.

How filling a food is will be based upon what category it falls into. A kabob that's considered a dish, hence, will be less filling than one that is considered cuisine (and while recipe type is mostly static, the charites have a tendency to shift them into different satiation categories every so often - not quite sure why).
The exception to this rule is pastries and cakes, which usually aren't much more filling than most dishes are.
Exactly how many and what types of commodities are used has no effect from what I've seen.

a dish (fishcake) that was unfortified and filling gave 2 levels of satiation (peckish to reasonably full)
the same type of dish (a different fishcake) fortified and moderately nutritious gave 4 levels (weak from hunger to utterly satiated)

As far as satiation goes, gourmet > delicacies > cuisine
A fortified cuisine has the maxed potential for satiation, as would fortified delicacies and gourmet foods.
I'm not sure of the exact differences when they aren't fortified, since some foods recover parts of satiation levels as opposed to entire ones, and it is very hard to gauge how close or far you are to the next level of hunger. If you're really interested in finding out, though, you can probably get a decent gauge of the difference by feeding different foods to a mount with a near empty feed bag and see how many months they add.

I've been a trans cook with a spatula forever, and my impression has been that the better you are a cook, and having a spatula, makes fortifying your food more successful for less flax (though I can't recall if that's actually true, haven't tested, I was dormant for nearly fifty game years), and your food is more satisfying even without being fortified.
My platters take me from passing out from hunger to satiated without being fortified and without using satiation. I don't bother fortifying them.
Mebbe we can sit down and do some experiments to see... problem is getting folks who are hungry to do the testing!

A bowl of fortified rabbit soup made by me with my spatula in hand just took me from weak with hunger to reasonably full.
Followed by a fortified rabbit pie, also made by me with my spatula, took me from reasonably full to utterly satiated.
Just some data points in case they help.
