I think the trick to getting a fat beast is lots of mind or spirit feed with not so much body feed. So remember to feed your oats, unless you want a fat beast.

Meat: Gives you a huge bodybuilder horse, or somewhat evil-looking
Fish: Not sure, same as meat?
Vegetables: Give you a fat horse
Fruit: Usually gives you a normal/generic horse
Eggs: Same as fruit
These are just guesses, and combinations of feeds could result in a completely different horse. But the moral is, eat your oats!
