When you said "now we know there are plain townies", I thought you meant, that if someone claims to be a vanilla towny, we know its an actual possibility.

Well, the way Shaddus seems to have arranged it (at least in one specific case), it is possible. I'm going to assume it's probably not likely, mind you, and that Biggs/Wedge was probably a one-off.
