Maybe you economically minded folks can help me. I manage inventory and ordering at the cupcake shop and my boss is miffed at me because I keep more flour in stock than we typically use from week to week. My reasoning is that it never goes bad before we use it, we have the space to store it without taking up space for other supplies, and it's absolutely critical to the operation. Generally, I order the quantity that we use each week, but I always keep more in stock. And some weeks we DO go through all that flour, and it's not always predictable when we're going to have a big week.

He says it increases food costs to keep a surplus on hand, but I don't see it. None of it goes to waste. I'm sure there's some empirically proven economic principle about capital being tied up in purchased goods or something. pullhair.gif

Such a silly thing to get worked up over, I know. But inventory is like the one thing I do for the business that no one else does, so it frustrates me to screw it up.

Personally, I'd be inclined to agree with you. Might be better to have extra that you MIGHT need than run out and have to shut down early. I'm sure the conversation would flip if you ran out of flour, and I would say running out and losing however long worth of business would be much much worse than having some extra.

Especially if it doesn't go bad, which means you do end up using it.

I'm glad my boss handed me a stack of cash and the keys to the van, and said, "Go pick up what we need." He got every receipt and every cent of change, and never had any problems with it. I always bought slightly more than I thought we would need.

I get the sense it's just one of those thing I have to do exactly his way. But we'll see what he has to say about the economics of it. He was in a hurry to get to his newly purchased river house so he couldn't talk it through with me today.

In all other respects he's a great boss. I've just got frustrations from several sources making this effect me more than it should!

Gah, I hate it when I suddenly dive in a rant. I feel horrible, especially since I basically yell at my dad, who's done nothing and certainly doesn't need to be yelled at the moment he comes home. Just wish I didn't feel like such a failure right now but then again I am. Seeing as I've got no job, and I really don't want to go to college but should. Ugh, too much pent up frustration at myself and my stupid situation.

He's probably referring to the time value of money: a dollar spent today costs more than the same dollar spent tomorrow, because of the value of accruing interest, or the lack of accruing debt interest, as well as the difficulties of cash flow. On the scale of a few pounds of flour, it's ridiculous to get worked up over the time value of an extra sack of flour bought a week early. However, as a general principle, the most efficient use of money is always to not spend money until the minute you need it -- but not a second later.

Because the time value of money only increases slowly up until the moment you need the flour, and then drops off sharply the moment you end up not having enough of what you need, one generally aims to not get too close to the perfectly optimal solution, because you can't know when that moment will be, and it's far better to err on the side of a little too early. But if you're trying to squeeze every last penny (and in my experience, every single living being that has ever run a restaurant has always been one to squeeze every last penny -- presumably the ones who don't, don't make it), you'll still try to get closer to it whenever possible.

In the case of the flour, it might save a penny a month. If you add up everything he could be doing this with... it might save a quarter a month. Whoopee. For more on this subject, research "Just In Time Distribution Chain" theory.

Good luck ! I think my sister should be graduating this year...I think. I dunno I remember something about how she needed like 1 more credit or something. I dunno lots of hoopla from the university I think.
