I'd like to think I've had a colorfully eclectic gustatorial past, but I've never been offered rat. I'd probably start with squirrel and go a bit sweeter, though I couldn't say if that's in any way accurate. When in doubt, use broad strokes and focus more on the flavors imparted by the method of cooking. Let the eater's imagination fill in the blanks.

I love lobster. I come from a place famous for it! I cannot, however, drop my own lobsters into a pot. I hate even picking my lobster out for sacrifice.
EDIT: Inserting a knife near the head is typical of dishes requiring uncooked/specialty dishes (stuffed lobster, for instance). Boiling water, head-first, is more typical.

Red Lobster, where I had a brief summer job a few years back. And cooking shows on TV, which is of course irrefutable proof of all that is true and right. Couldn't say which ones, as I don't follow any particular ones besides Anthony Bourdain. But yeah, I'm pretty sure of this, not including the PETA comment.
Of course, that's restaurants. I would imagine most people boiling crustaceans at home wouldn't bother with the (rather fiddly) knife jab, or make extra time and take up space in the freezer for the near-freeze.

Crab and lobster taste sweeter than most meats, as Aubrey said, but they also have an incredibly rich taste. I can barely eat lobster nowadays because of how rich my tastebuds receive it as.
Bear tastes a lot like pork, which varies (to my experience) between a buttery taste and a taste not unlike chicken. It's just a little more fatty, which makes it richer if cooked right.
I would ASSUME squirrel and rat may share the same types of tastes since they're both small and rodent-like.. however, I'm not sure what that taste is, because my wild game experience hasn't touched on squirrel. If you need a good description of rabbit, duck, snake, or venison, though.. well, I could do that for you privately.

Squirrel is good. I haven't had it since I was a kid, so I'll have to ask my fiance, since he's had it more recently. It's not a bad flavour...

And I would be surprised if many here have tried rat.
I saw an AMAZING looking recipe for rat the Roman's used. It was stuffed and I think the main ingredient was honey.

I had antelope burger not long ago. It tasted a lot like beef, just with a bit of a gamey tang and a whole lot lighter. I can't imagine what it's like being a vegetarian, but one of the big things I'd imagine you'd notice if you tried meat is just how heavy some of it is. The antelope was light for red meat, I guess, but compared to your average tofu or mushroom burger, it'll still sit about five times as heavily on your stomach.

You ever tried venison? I'm 100% carnivorous (huh huh I like meat), but the stuff I had was crazy heavy. It was palpably dense, like a meat singularity. Tasted great, though.
