Activity for a production depends on how many people spent how much time making it, watching it when it was performed, and watching replays. You can see all these things listed in the production's status. Replays count less than the other things (because you can have so many more of them). Doesn't matter at which stage replays happen, they count the same anywhere.

Activity for the entire stage depends on the activity for all the productions on it that have been active during the biennium in question. The production that was submitted counts the most, other productions recorded in that biennium count the next most, and everything else counts a bit less.

Thus, your score depends not merely on how many times the play gets watched, but also how many people put how much time into making it, into watching its premiere, and into attending its replays, and the same for all your other productions. There's no shortcut; you just have to encourage people to make plays (and, like books, bigger plays with more people actively participating count more) and watch them.

Ratings don't matter because they were gamed into meaninglessness. They're merely there for people to use to decide what to watch if they feel like watching something, but they're of limited use for that.

That's for theatre score though, right? Not who wins the prestige? Or is that the same thing, or... why can't this all just be written down somewhere easy to find and reference.

The winning play wins based on that play's score alone, but that's not worth any extra culture/power, just more bragging rights for the director.

The city/commune that has the highest total score (play score plus overall activity score) gets the extra 300 points.

Is there a way to use a dagger in a combat way other than the psionic skill(s)? Just a simple cut or anything? What about a wiccan's athame?

You could swing it, I guess. Or throw. With a poison. Not very accurate, either way unless you've got Knighthood though. Weaponparry perhaps, but alternatively, shieldstun with a shield rune?
