I see it by writing it in word and then copying it to a book, lets you see the word count quite nicely.

Neither. You can give a beast more reagents as soon as you've the food in the bag, it eating the feed as time goes on doesn't seem to change anything.

If the librarian archives it but doesn't publish, the game will give you its official word count.

If you are a Freshman Novice, you will lose Kata, Harmony, and Acrobatics. I... honestly have no idea what will happen to your tattoos skill, heh.
If not a freshman novice, then you won't have a problem.
Those guild skills will give you a 100% lesson refund though, so you can just relearn them.

If you switch to another monk, you shouldn't have to forget acro or kata, just the kata spec. And only harmony if you are moving to a Stealth guild.
