Maybe! But that's missing the point. If you like how the center turns out, a regular brownie pan means you get to enjoy only a quarter of what you make; the rest is overdone edges you have to pawn off on someone. But with this pan, you can just cook it less and get all centers. The key is that everything cooks evenly so you don't have to balance overcooking the outside and undercooking the inside. You get it all whichever way you want.

That said, in my experience, most people who think they dislike the edges, actually only dislike the overcooked, dried-out edges they've had because people had cooked the pan until the center was done, leaving the edges very overdone. Once they try edges done in a pan that isn't fighting against you, they usually find that they like edges after all.

But however you like it, this pan lets you have it all that way.

Well, my biggest complaint about edges is that they're usually hard while the center is soft and moist. So, maybe you're right! smile.gif

Anyways, big rave: I got laid off (With the option to return when work picks up) because I literally worked myself out of work.

They said we had 2-3 months of work ahead of us. In about a week or less, we almost finished it all. Without overtime. Today I got the message that I was laid off, and that I was formally laid off yesterday, so I can start collecting unemployment as of yesterday. "Uh yeah, sorry to have to tell you this, but we're going to have to lay you off. I don't know when we're going to pick up pace again, so I'm going to tell you that you might as well start getting unemployment. We'll call you when work picks up again. If you have any questions, just give me a call, or call the second shift supervisor."

Really nice and polite about it.

Now I can say: "I can work myself out of work."
