Most times, you start them by greeting a named denizen. They'll generally say something back to you. Then, you can often ask for more details on something they said by mentioning it back to them. Like if they said, "I sure hate rockeaters." You might say, "Why do you hate rockeaters?" and they might say, "Because a rockeater stole my harp." (that's totally made up, by the way, I know of no quest like that!

Ok, I get that (though I haven't found anyone to give me quests just yet...). So, how do I start the Nekotai collegium quests? I've basically just been wandering around in the Newton Caverns for a while, but to no avail. I assume I should start those collegium quests in Glomdoring somewhere?

Yeah, your Collegium quests won't be in the Newtons. But there are quests in the Newtons too, of course.

How many herbs is the accepted norm to leave when harvesting?

Whenever I've had an herbalist character, I've left 5 just before, during and just after peak months, 10 the other months except for the month before, of and after hibernation when I don't harvest that herb at all.

It won't show anything except for a tag in your app list unless you do something to earn the blessing bonus. Try winning a spar or getting a new honours line or gaining/losing a level. All of those trigger it, and you should see the line in your Facebook news. But no, there's no app box or anything.
