What are stats to aim for on a greatshield? I don't want something epic, but something that would be considered good.

No, you want epic. Tell your forger you want a 90/90 greatshield. Be sure to log the response.
EDIT: And then ask for half that. 52/52 is a shield rune, and that's a pretty awesome shield.

I tend to ask for a 40/40 shield at minimum, but get something better out of it....and it seems to never take that long either!

There is no way to block scrying. Just ways to see it.

There is no item to block scries, no, but there is a singular irksome ability called Veil as the Transcendent skill in Stealth. This alone blocks you from all scries for about 5 minutes for 10p, I think.

Disenchanting a sigil will make that sigil give you its component parts. It will NOT give you the extra 2 silver for the flame sigil though, so it's not a profitable gain. You cannot disenchant non-sigils.

40/40 is about average for any shield. 52/52 is what an artie shield is (shield rune). You can aim for that but it's unlikely you'll get it any time soon.

I have noticed that when afflicted with deafness, even having sixthsense up, my character often suffers bouts of deafness. Is there some way to remedy this without being rid of the protection deafness offers?

If you eat earwort for truehearing, and log off, when you return, you will have lost truehearing but still have deafness. Not much you can do about it, sorry.

Erm, sixthsense has nothing to do with deafness. It lets you see while immune to certain visual-based attacks.
