I like the soundtrack to Final Fantasy 6.
My favorite Video Game Music Composer is Nobou Uematsu, as well.
Not that I do not like other stuff, that's just what I like the most, Final Fantasy music.
I especially enjoy the Coin Song, for some reason.

Yay! Someone else who likes it! Most of the time when I tell people about him I just get weird looks after they listen to one of his songs. If you haven't listened to it yet I recommend Scorpius Circus, which was the first song by him I ever heard so I have a neverending love for it. And Les Enfants du Paradis is pretty awesome, I agree.

If you like music from the Legend of Zelda series, you absolutely must check out ZREO: Zelda Reorchestrated. Your favorite music, only better.
The Knights of the Old Republic series had a couple good tracks: Mandalorian Battle (from KotOR I, Jeremy Soule) and the stunningly beautiful Rebuilt Jedi Enclave (from KotOR II: The Sith Lords, Mark Griskey) are two of my favorites.
The soundtracks from Elder Scrolls III: Morrowind and Elder Scrolls IV: Oblivion are stellar as well, both by Jeremy Soule.
A soundtrack and game I discovered by chance (a friend recommended it to me) is Fahrenheit (also known as Indigo Prophecy) with music composed by Angelo Badalamenti. My favorite track is Escape or Fight.
Spencer Nilsen did a great job with the Sega CD soundtracks of Ecco the Dolphin and particularly the Ecco: The Tides of Time.
And last, but by no means least, Jamey Scott's soundtrack for The Journeyman Project 3: Legacy of Time. This was one of the earliest games that I remember actually noticing the soundtrack. Though only a small number of CDs were produced, the composer was kind enough to send me a copy of his own copy when I emailed him about it. If you listen to no other music I've suggested, listen (and watch) the ending credits, Gage's Theme and Arthur's Theme, the latter being a completely off-the-cuff, improvised song that was recorded by accident and included in the credits because it's so darn funny (Matt Weinhold is the actor who played Arthur).
I do have a few more game soundtracks, but these are the ones I listen to most often.

The credits music just didn't match the overall feel of the game at all. Most of the boss/running around music was really upbeat and fast paced, but the credit music is this slow...thing. Don't get me wrong, I loved the music throughout the whole entire game...except the ending.
My favorite symphony(?) would have to be when you restore a Guardian tree but my opinion may or may not be biased because of the super cool animation that goes along with the music...

I've been kind of avoiding this topic, because I absolutely hate having to pick things out that are "the best", because there's not really any such thing. It's situational, and about the best I can do is throw out highlights and stuff that just clicked really well with the visual content it was paired to.
Having said that, I couldn't let people start talking about touhou without any mention being made for Cosmic Mind. For shame!
And while I'm also a fan of Shadow of the Colossus and Okami, I'd rather go out of my way to bring up a few others that have received no prior mention.

Considering the inherent overlap in the games we've played, I effectively agree with all of these - particularly Jeremy Soule and his Elder Scrolls themes (whose Skyrim theme I can't wait to hear in its entirety) and the Myst games.
The 'Tales of' games generally have some pretty good music as well, particularly liked the theme from Abyss.
Of those not mentioned so far, Heavy Rain has some very good, emotive music (IMHO) - particularly Before the Storm and Painful Memories

Yoko Shimomura had me in with her music in Legend of Mana (and later on with Kingdom Hearts), and Yasunori Mitsuda for Chrono Cross. Oh and let me add a single track in Mass Effect 2, "Callista" a.k.a. Afterlife's clubbing/techno music on the first floor! :3
