It seems to be fairly outdated though. I know there's a d'Vanecu in Mag (saw it on WHO right now), and I think I've seen a number of the others as well. The Stormcrow in Glom is also taken, as far as I know.

There's the main historical families, and then there's the lesser historical families. Shervalian/Inalai would be the main historical families for Celest along with the others. And La'Saet are the lesser historical family.

I've sometimes wondered if the Shee-slaugh family could ever be adopted. It would help broaden the Glomdoring family list, and it isn't that far-fetched. Rowena was impregnated by Laeroc to create shadow faelings, after all, and the Nightshades exist. Maybe Lhiannan has a sordid history?

There's several names being thrown around that are not families, but epithets or first names (the Ebonwing is Shantru Goldfeather's epithet, due to his unusual dark plumage, and Glaruda is the first name of Holy Mother Glaruda Farain, the Ecclesiarch of Celestia at the Fall of the Empire, to pick out two).
Also some may find it important to delineate between families and houses - Inalai, Shevat, Nerale, n'Lochli, d'Murani are houses - Symfale, Olearium are examples of what may simply be families.
Similarly, simply because there is a denizen associated with a family (ie Dekoven, Kalas, etc) does not make it a historical family. It is very rare that it is decided that a player family be added in to the history in some form (the only example I can think of is the La'Saets), and is not something that can be requested.
If you want to take up a historical name, you need to speak with your city's patron (or your family's patron), after you've accrued a family of a sufficient size (right now it's 10 or more active members - and by active, I mean 'willing and able to vote 'yes' when an administrator contacts them regarding the decision) - you'll also need to construct a history explaining the relationship and your lineage, among other things - with your patrons guidance.
Things like Treeheart are potential families - and inconsistencies like Jaryn and the Twin Springs can be addressed should a sufficient family that meets its strenuous standards come forward.

That made me rather curious... What's the difference between a House and a Family? I thought all families formed Houses, and they were only separated between Lesser and Greater Houses.

Mechanically, they are no different. Any family can become a "house".

I took Ebonwing from Aellrya Ebonwing, the first Oberst of the Sentinel Company of Temporal Anomalies as signed on the contract:
